Almond Chocolate Toffee Crunchies


More almonds and chocolate! This yummy recipe was sent to me by my blog friend, Donna. Easy and delicious!



Prep time: 10 mins
Cook time: 20 mins
Total time: 30 mins
Serves:     24 Almond Chocolate Toffee Cookies which taste 
like Almond Roca 
  

Ingredients 

  • 1 sleeve of saltine crackers 
  • 1 cup butter 
  • 1 cup packed brown sugar 
  • 2 cups chocolate chips 
  • 1 cup chopped almonds, toasted 


Instructions 

  1. Preheat oven to 350 degrees F. Spray a rimmed cookie sheet with non-stick spray. 
  2. Line the crackers on the cookie sheet side-by-side. 
  3. Melt butter and brown sugar in a medium pan on medium-high heat. Stir continuously, heating the mixture for about 3-5 minutes until it turns into a nice caramel-looking sauce. (Butter and sugar should be completely combined before moving on to Step 4.)
  4. Pour the sauce over the crackers until they are completely covered (it’s very important to completely cover the crackers or they will burn when you bake them).
  5. Bake for 15 minutes. Remove from oven and immediately sprinkle chocolate chips over the toffee-covered crackers. The chocolate will begin to melt. Spread chocolate over the toffee mixture and top with the chopped almonds. Note: the chocolate chips should melt.  If they don’t, just pop the baking sheet back in the oven for 15 to 20 seconds. 
  6. Allow the crackers to completely cool before breaking toffee up in pieces. Enjoy!
